How to grill a steak like a Texan ?

well im not a Texan but i love a good steak and love to grill ... i only turn the steak one time and tell its doneness by touch a guy told me once that you can tell the wellness of a steak by the way it feels like your lip is rare ... your nose tip is around med rare / med.. and chin is med well it has worked for me .. i also like just the flav. of the meat and put only a little salt and pepper on it a good cut like t-bone or 7th rib steak are my fav.. hope i helped :)
